AU &RPS Kink Meme Gabriel/Sam Myster Spot AU, Early Angel Reveal
Back in Mystery Spot, when Sam begs the Trickster to give him Dean back Gabriel finds himself not only giving in but also explaining to him exactly why he did it and ends up revealing to the Winchesters (or Sam only) about the angels and their expected roles as vessels.
Stanford AU
Sam stays at Stanford. Gabriel is a teacher there, whether or not he's an archangel/trickster or human is up to the author.
Season 4, episode 10, Heaven and Hell AU
Heaven And Hell, Gabriel decides that he doesn't want his family jump starting the Apocalypse. So he interrupts the big Angel/Human/Demon showdown and throws everyone for a loop.
Where are they?
In Dark Side Of The Moon, Ash says he hasn't found John or Mary in heaven. Maybe that because Gabriel has been keeping their souls safe so the other Angels couldn't use them. Maybe he has Jo and Ellen's as well. Gabriel allows the boys a chance to talk to them.
Sound the horn
Gabriel is important to the Apocalypse so he's resurrected as a human with memories of a human life and no memories of his old one. Both heaven and hell are looking for him so they can have him sound the horn on their behalf. The Winchesters (and Castiel) have to move fast and save this postal worker who's clueless to his purpose.
Reincarnation for All Angels
In the end all the Angels die(except maybe Castiel) and are reborn as humans in the 20th century in the mortal forms they died in. Few of them remember bits of their old lives and Gabriel is one of them. He goes to find his remaining angel brother Castiel or to find Sam and Dean to reassure himself that he isn't crazy. Bonus points for him having squabbling older brothers named Luc(Lucifer) and Mikey(Micheal). Other bonus points for Anna, Uriel, Zach and Raphiel being talked about.

AU Mystery Spot - Time Travel(ish)
SPOILERS FOR 5.19. After reviving Dean, Gabriel gets a message from his future self via a Casa Erotica video. Realizing he's a dead man if he does nothing, Gabriel attempts to get into the Winchester's good graces. What at first is just an ploy to save his own skin becomes something more when he connects with Sam. Bonus points if Gabriel doesn't tell either of them he's an archangel until late in the story, if at all.
AU Candyman
Willy Wonka got nothing on the things Gabriel can create. Dean is the customer that always visit the shop for the latest creation that Gabe can cook up (and for the chance to get Cas out of his shell a bit more). In tow (for the first or could be routine thing) is Sam who finds himself enduring the attention of the Candyman. Spoilers for 5.19 and 5.22, Lucifer trapped Gabriel in hell after killing him. Gabe is chained to a rock similar like Loki in Norse mythology. Sam and Adam are in hell as well and find Gabe and rescue him. Gabe gets the boys out of hell but wind up giving them some kind of marking like Cas did to Dean. Cas, Adam, Gabe, and Sam continue hunting together and leave Dean at peace with Lisa and Ben for years until one day they meet up with Dean on a hunt. OT4 but then OT5, and maybe Adam will kinda feel left out once Cas is reunited with Dean, but they make sure everyone gets the same amount of loving. lulz
Slight 5x22 spoiler, Harry Potter x-over
Supernatural/Harry Potter Crossover A few months back during one of the other kink meme's we got a couple fics where Gabriel spared some of the nephilim and in doing so founded the wizarding world. Years later he returns to the wizarding world as a professor. I love to see more fic like this. Maybe a fic where Sam is a little surprised to find out the books aren't just fiction, that Gabriel was once a professor, and that Gabriel has asked Harry and the gang to help stop the apocalypse. Forgot to add a part Gabriel's reason for calling in the extra firepower, back in 5x19 when he said he saw how this all ends, he has all the way up to seeing Sam jump in the cage. He's in love with Sam and desperate to do anything to prevent that outcome.

How about if, during pre-5x08 season 5, Castiel comes up with a new lead for the boys to follow. Gabriel. He could be a powerful ally - and he has, on occasion, expressed how tired he was of the fight...and might be pre-disposed towards them. Cue the boys trying to track down an absent, really doesn't want to be found archangel with limited results. Bonus if they're always just one step behind the archangel.

When they learn that they are needed to bring about the Apocalypse they rebel. They hide out in a small town they have roots in, unknowing that the town is the epicenter for it all.

Up to the author whether Gabriel is actually crazy or not.

SPN / RPS - Gabriel/Jared, Sam/Richard
Gabriel and Richard end up body-swapped (i.e. Richard in SPNland with Gabriel's powers and Gabriel the actor) for a week. Trouble ensues. Optional: For some reason Sam and Jared's cellphones actually can connect through the dimensions. Cue drunk texting and photograph trading.
There are also lots of awesome prompts that have already beeen FILLED but it can never hurt for them to get more.
